There are lot of changes in Windows 2008. How to disable internet explorer enhanced security configuration in Windows Server 2008?

Yes there is lot of GUI changes in Windows 2008, but you can  disbale the Internet explorer enhance settings in 2008 by going to Server Manager and then to Security Information. See the snapshot/image below to see how it can be changed.
